Conway Cups are grown on the sandy bottom of Cascumpeque Bay, which is the body of water that the Foxley empties into. The shells of the Conways are deeply cupped and well defined, often with a pastel greenish hue. The meats of the Conway Cups are full, with a mild level of salinity, and a sweet, clean finish. The Conway Cups are roughly three and a quarter to three and a half inches in length, and are more or less available on a daily basis without a pre-order.
“They were clean as a whistle right out of the bag, there wasn’t a broken one in the whole lot and they were probably the biggest and fullest mussels I’ve ever had. In the past I’ve eaten mussels from New Zealand and I thought they were good but yours are the best.”
