On any given day, we at J.P.’s Shellfish offer a wide variety of the finest Atlantic (aka Eastern, Common, Virginia) fresh oysters (Crassostrea virginica) available.  Each day, we do our best to direct source no less than 15 different bed specific oysters from the nutrient rich waters of the North Atlantic.

There are a virtually infinite number of factors that affect the characteristics of an oyster.  These include, but are not limited to, such criteria as salinity, method of culture, seasonality, shell strength, meat fullness, size, etc.  Please see the individual oyster pages, and our comprehensive SHELLFISH ASSESSMENT CHART for a more detailed qualitative and comparative analysis of each variety.

We are very particular about which varieties of oysters we source.  We appreciate the fact that we could source less expensive oysters from different regions of the Atlantic seaboard and the Gulf of Mexico, however, we feel that any additional cost that may be incurred is completely justifiable.  We are confident that you will appreciate these differences in availability, quality, shelf life, and the environmentally conscientious fashion in which our oysters are grown and harvested.
