North Point Oysters

J.P.’s Shellfish North Point (Crassostrea virginica) oysters are harvested from of a select number of leases located on the Northwestern shores of Prince Edward Island, Canada.  The hard packed mud and clay sea floor of the region provides an ideal environment for the grow-out of the North Points.  Our North Point oysters are all hand harvested from the protected shallows of P.E.I.  The oysters are brought up from the floor of the ocean by means of tongs, and immediately go through an initial grading process by our watermen.  Oysters which have not attained acceptable size and are returned to the beds to continue their grow-out in the phytoplankton rich waters, while the oysters which do meet our criteria are swiftly ferried a scant few hundred yards to our own processing facility on the banks of Howard’s Cove.  Here the oysters are cleansed of any bio-fouling (weeds, barnacles, etc.), further graded for size (North Points are roughly 3 ¼ to 4 inches), and are meticulously hand-packed one at a time, cup- side down, in an effort to maximize liquor retention.  It bears noting that the North Points  are hand chipped and manicured during their grow-out.  As a result of this, the oysters possess a great cup depth and definition, further promoting liquor preservation.  The thick shells are resistant to splintering and or cracking during the shucking process, and the moderate to slightly high salinity levels of the meats make the North Points a popular variety among oyster bar employees and diners alike.
