Ninigret Cup Oysters

Our Ninigret Cup oysters (Crassostrea virginica) are the product of three leases located in the Ninigret Salt Pond (aka Charlestown Pond) in Charlestown, Rhode Island.  The oyster seed are started out in an upweller system built into a 48’x24’ barge which is moored in the middle of the pond.  After the Ninigret Cups reach a length of approximately half an inch, the tiny oysters are transferred to a rack and tray suspension culture for the next stage of the grow out process.  During this time, the trays are frequently removed from the racks, and vigorously shaken to chip away new growth, and promote cup definition.  This period of the grow out lasts until the oysters are roughly one-and-a-half to two inches across, at which time they are switched over to a bottom culture for finishing.  Complex, eh?  The oysters are set on the hard packed sandy bottom for the remainder of their grow-out, and are tonged from the bottom on a per order basis, and are available in increments of 100.  Size wise, the Ninigret cups are what we refer to as a cocktail oyster…That is to say, roughly two and three quarters of an inch or so across.  Flavors of the Ninigret are smooth and buttery, with an underlying sweetness, and a pleasantly mildly salinity in the finish.
