Maine Flats Oysters
Now then...Our Maine Flats (Ostrea edulis) are wild product which are harvested off of the mid-coast town of Harpswell. Right now, the Maine Flats are hand raked or diver harvested (either way, iin an ecologically sound fashion). There is no appreciable destruction of habitat associated with this method of harvest.The Maine Flats are coming in at roughly three and a quarter to three and a half inches in diameter (each oyster is individually banded), and are packed out in 50 count units. As far as aesthetics, the Maine Flats are second to none. Sizing is terrifically consistent, and the scalloped shells have a pleasant green tint to them. Meats of the Maine Flats are relatively firm, and the flavors associated with the Flats are overtly driven by mineral and metallic overtones.
