

We have started sourcing Lady Chatterley (Crassostrea virginica) oysters, which are grown out in the pristine waters of Nova Scotia. Now I don’t know if D.H. Lawrence was a fan of oysters, but I don’t think it too much of a stretch to imagine that he may have indulged in a few of the delicious bivalves from time to time. The Lady Chatterley’s are a “choice” grade oyster, meaning they possess a certain degree of congruity amongst themselves, and are marked by excellent cup definition, and thick, chip-resistant shells. Flavor wise, the Lady Chatterley’s are overtly briny, and are not altogether dissimilar to the ever-popular Tatamagouche (which we have also been seeing with a fair amount of regularity as of late). The Lady Chatterleys are available in 100 count units, and although pre-orders aren’t often an absolute necessity, they are certainly appreciated.
