Conway Cup Oysters

We are thrilled to announce the addition of the Conway Cup oysters (Crassostrea virginica) to our already extensive oyster list.  The Conways are sourced from the Foxley River, in the Northwestern region of Prince Edward Island, Canada.  Perhaps a little background will help explain the why we are now sourcing this particular variety.  Earlier this week, I personally fielded a number of phone calls requesting a certain bed specific oyster, which we do not carry.  We do not carry it because another distributor has an “exclusive” on this premium oyster.  Fair enough.  So what to do?  We found another harvester/packer in the same exact region of the same exact river, to provide us with (yes, for all intents and purposes, the same exact) oyster.  To paraphrase Shakespeare:


"O! be some other name: What's in a name? that which we call a Raspberry
By any other name would taste as sweet"

The Conway Cups are available either as a cocktail (roughly two to two-and-three quarter inches across), or as a small choice.  The cocktails are bag cultured in the brackish waters at the mouth of the Foxley.  The choice oysters are grown on the sandy bottom of Cascumpeque Bay, which is the body of water that the Foxley empties into.  The shells of the Conways are deeply cupped and well defined, often with a pastel greenish hue.  The meats of the Conway Cups are full, with a mild level of salinity, and a sweet, clean finish.
