Chedabucto Bay Oysters

J.P.’s Shellfish Chedabucto (Crassostrea virginica) oysters are sourced from the Northeastern tip of Nova Scotia, Canada. More specifically, these oysters are a product of the region of Chedabucto Bay known as North Harbor. The Chedabuctos stand as a shining example of exactly how outstanding a wild oyster can be. These oysters are never chipped, manicured, or held in any cages, bags, etc. Often, when oysters aren’t subjected to a little manipulation, they lack continuity in regard to shell size, shape and cup definition. This is not the case with the Chedabuctos. These oysters possess a deep cup and are graded for size to provide you with a level of consistency that you may have only previously come to expect from farm-raised oyster varieties. This exceptional quality is very much the result of the hard packed sand floor of North Harbor, and the relatively slow grow-out of the oysters. This slow grow out is largely due to the icy north Atlantic waters which feed North Harbor. The Chedabuctos are all hand harvested by tonging them off of the floor of the Harbor. Though this may not be the most efficient method of harvesting oysters, it is certainly one of the most desirable in terms of environmental sustainability. There is no destruction of habitat associated with the tonging of oysters, nor are there any undesirable bycatch issues inherent to the Chedabuctos. Fisheries such as this should be recognized and rewarded for their ecological awareness and sound fishing practices. Size wise, we do our best to source the large choice Chedabuctos, which range from three to four-and-a-half inches in length. The Chedabuctos are also available as cocktail choice and jumbo choice. A pre-order is required on either of these latter sizes. The shells are dense, and resistant to chipping or splintering during shucking. Meats are full, and possess a medium to high salinity level that has become so strongly associated with the oysters indigenous to this region.
